This month La Gourmet Box takes you to Marne, in the region of Champagne. The fame of Champagne's dazzling wines often overshadows the fact that there are many incredibly talented local culinary artisans around Epernay and Reims. We made some excellent gastronomic finds in the region of Champagne!

You really can’t experience gastronomy in Marne without a delicious glass of champagne... And not just any champagne: a signature sparkling wine produced on a family estate in Ambonnay, one of the 17 towns classified as Grand Cru de Champagne (among the 320 wine-producing towns that make up the Champagne designation of origin).

Exceptional grapes for a unique champagne infused with the savoir-faire, perfected over generations, of Arnaud.

We selected his Brut Tradition cuvée, a blend of 65% Pinot Noir and 35% Chardonnay. Fine, creamy mousse, a bouquet marked by the aromas of Pinot, red berries and peaches, and a delicately chiselled mouthfeel that reveals the saltiness of a unique terroir.

We’re convinced that you’ll adore this champagne.

 
Traditional Ardennes red turkey rillettes (90 g)

With its tawny red plumage, powerful thick thighs and hefty weight, between 4.5 and 9 kilos, it's hard to miss an Ardennes red turkey! Apparently, it was brought to the region in the late 16th century, when the Spanish ruled this part of Europe. According to legend, the breed is a cross between a wild turkey and a Norfolk Black.

This unusual fowl has been combined with duck fat to create deliciously creamy rillettes.

A great way to kick off your hors d’oeuvres feast!

Organic whole-grain mustard, original recipe with wine vinegar (200 g)

Reims Old Style mustard contains no preservatives. It's made with hand-picked premium mustard grains, Reims vinegar obtained exclusively from Champagne Ardennes grape varieties, and white wine. The grains are slowly soaked in juice to bring out all their intense flavour and spiciness.

This refined country mustard is now part of Champagne’s culinary landscape and has become a staple in the kitchen: you can enjoy it spooned over red or cured meats, used it to spice up sauces or make delicious vinaigrettes...

 
Farmhouse chicken fricassee with champagne (350 g)

Premium ingredients (free-range chicken fed on locally grown grains), renowned savoir-faire and a recipe perfected over the years have given us this delicious fricassee, whose rich creaminess is enhanced by the slightly acidic hint of champagne: warm over low heat and dig in!

 
Artisanal Reims cathedral-shape pasta made with Ardennes spring water (150 g)

A farmer in Condé-sur-Marne, Christophe began to turn his grain crops into homemade pasta using spring water from the neighbouring village.

He also had the clever idea of giving his delicious pasta unusual shapes.

If you can’t visit the Reims cathedral, at least you can enjoy it as a side with your champagne fricassee!

 
Craquant sablé with the famous Rose de Reims biscuit and Choco BN-style Gianduja chocolate (170 g)

With over two centuries of culinary history, Maison Fossier is a legend in the Reims biscuit industry. One of its best-known creations is the famous Rose de Reims biscuit, which has one special advantage: it doesn’t crumble when elegant ladies dip it in champagne.

Here it’s been combined with Gianduja chocolate, an Italian praline made of icing sugar, roasted hazelnuts and chocolate sandwiched between pure butter biscuits: a delectable throwback to the days of gourmet sophistication!

These premium raw materials, combined in tried-and-true traditional recipes, are the secret to this delicious macaron, crisp on the outside and meltingly creamy on the inside.
